News You Can Use- Thanks to the
help and generous donations from our friends, clients, vendors and facilitators, Catalyst Ranch's Lasso The Cure campaign was a tremendous
success! 35 of us gathered at Grant Park for a chilly morning race on Mother's Day and including the Limelight Catering and Bohemian
Theatre Ensemble teams, we were able to raise almost $8,600, just short of our $10,000 goal. We are so proud of this amazing number, but we still can
use your help. We WANT to reach that $10,000 goal we set for the Y-Me National Breast Cancer Organization.

DeeDee's Dish- Boy, all this talk about Greg Christian and healthy eating has got me thinking. With all the great food that
comes along in the summer months, how do we find some delicious summer recipes, while still keeping the barbecue at bay? How about an
amazing Peppermint Soup? Made from all organic ingredients, this all-natural chilled concoction is sure to freshen up any summer
gathering.
Peppermint Soup For the soup: 1/2 large organic avocado, pit removed 1
large organic red bell pepper, coarsely chopped Water from 1 young coconut 1 stalk organic celery, roughly chopped 2 thin pieces fresh
organic ginger root 15 fresh organic spearmint leaves 2 small pieces fresh hot pepper
For garnish: Mint leaves Finely chopped red bell
pepper Avocado slices
Remove avocado flesh from the skin and add with all the remaining
ingredients to a blender. Blend until smooth. Garnish with mint leaves, finely chopped red bell pepper and avocado.
