Two Brand New Culinary Vacations to Inspire you to Savour France.
 
What better way to start off the New Year than to introduce you to our latest culinary finds. Without further adieu…introducing the Provencal Cuisine Discovery and the Southern France Gourmet Route - be inspired by two unique food adventures. 
 
Provencal Cuisine Discovery takes place in Provence.  It’s a four-day course on the art of fine cuisine and good living in the South of France.  Chef René Bérard will introduce you to Provençal cuisine and its fabulous flavours and fragrances.  Stay in a country inn located in the magnificent Provençal village of La Cadière d'Azur, in the heart of the Bandol vineyards.
 
Southern France Gourmet Route focuses on food and incredible wines from the Languedoc-Roussillon region of southern France.  Explore this beautiful part of France and spend 4 or 7-days savouring the best that this area has to offer: cuisine, wine, weather, and natural beauty!  This region is rich in wine production - experience personalized tastings and walks amongst the many vineyards.  The local cuisine has its own distinct flavours that are delicious and reflect both French and Catalan influences.

Steamed Green Curry with Fish

Recipe of the Month
(to inspire the taste of French cuisine)
We thought we'd share an exotic recipe from the Southern France Gourmet Route.
 
Steamed Green Curry with Fish.
Serves 4
800 g white fish (cod or monkfish)
350 g thick coconut milk
200 g coconut milk
Small aubergines (eggplant)
Chinese lettuce
20 g fresh basil leaves
20 g green chili
3 bergamot leaves
4 teaspoons fish sauce
1 teaspoons green curry paste  
4 banana leaves 
Mix the green curry paste with the coconut milk in a large bowl, stirring continuously. Add the diced fish, fish sauce, sliced eggplant and the Chinese salad. Add the finely chopped basil, the chili and the chopped bergamot leaves.  Place preparation into banana leaves (one per person).  Steam for 20 minutes and serve hot with rice. I can taste it now!

Banana Leaves.
Impart a subtle anise fragrance to food and protect it while it's cooking.  Boil the leaves before using them to keep them from cracking.  Look for banana leaves among the frozen foods in Asian, Hispanic, or specialty markets.  If you are unable to locate banana leaves substitute with aluminum foil or parchment paper (as food wrappers). 
Bergamot Leaves.
A small amount of mint can be substituted for bergamot leaves.

Languedoc-Roussillon Wines.
The Languedoc-Roussillon area produces excellent wine in abundance - it has the largest production of any area in Europe.  It’s a land of diversity, reflected in the myriad varietals of its wines.  Full-bodied, robust wines are produced from arid soils, well-rounded wines come from the rolling valleys, and perfectly structured wines are from the terraces with lively wines from the coasts.
