We publish net unit growth from (each company has their own four-month cycle and companies have varied verification dates, percentages are not annualized as a result) one four-month period to the next. This is performed by re-verifying net growth figures of approximately 1,000 companies per month. Once our researchers identify the following growth results from our research efforts, we highlight a new round of results each week in our newsletter. December '07 results are now posted.

The index added 4 points during the month of November moving forward from 1031.39 to 1035.40.  The November gain was the seventh straight growth month.  The slow but steady growth pattern continued for another period.  Continue and see results.

 

 

 
 
 
 

Growing Concepts that have grown by at least 5% (if less than 50 units). 

Winnetka, IL-based POCKETS (founded 1989) has opened 2 units, from 10 to 12 (20% growth).  These are fast casual sandwich shops, open for lunch and dinner, with seating for about 30.  Per person check average is from $6-$12.  Catering, delivery, and online ordering are available.  About 10% of units are franchised.  All locations are in IL.

Houston, TX-based ALONTI CAFE & CATERING (founded 1974) has opened a new location, from 27 to 28 (4% growth).  The restaurants are fast casual, serving American cuisine.  Meal periods are breakfast and lunch, with a $4-$10 per person check average.  Seating is for about 100.  Catering, delivery, and online ordering are available.  Units are in the states of IL and TX.

Los Angeles, CA-based KOI has opened a new unit, from 3 to 4 (33% growth) and entered into NV.  The other 3 units are in CA, NY and Bangkok, Thailand. Three of these upscale Japanese restaurants are open for dinner only (NY location open for breakfast, lunch and dinner).  Per person check average is $30-$50.  Seating is for about 225.  Banquet rooms are available.

RUBY RESTAURANT GROUP headquartered in Newport Beach, CA (founded 1982) has increased by 4 units for their Ruby's Diner concept, from 41 to 45 (10% concept growth) and expanded into NV and TX.  The overall company growth is from 43 to 47 (9% company growth).  These are typically family/casual restaurants serving beer and wine with seating for about 100.    Some locations however, are in airports.  Other concepts are Beach Comber (1) and Shake Shack (1).  Trading states are: AZ, CA, CO, HI, NV, PA, TX and WA.

Boston, MA-based THE UPPER CRUST (founded 2001) has opened 2 units, from 7 to 9 (29% growth).  These quick serve pizzerias are open for lunch and dinner, serving beer and wine.  Seating is for about 50.  Catering and delivery are available.  Units are in MA and FL.

San Francisco, CA-based SPECIALTY'S CAFE & BAKERY (founded 1988) has opened 3 units, from 17 to 20 (18% growth).  The restaurants are fast casual bakery/cafes, with seating for about 70.  Meal periods are breakfast, lunch and dinner, with a $3-$8 per person check average.  Catering and delivery are available.  Units are in CA, IL, and WA.

ZOUP FRESH SOUP CO based in Southfield, MO (founded 1998) has increased by 3 units, from 16 to 19 (19% growth).  Units are fast casual serving soup, salad and sandwiches.  Seating is for about 50.  Catering and banquets are offered.  The per person check average is around $3-$8.  Locations are in MI, OH and PA.

TYPHOON based in Portland, OR (founded 1995) has increased by 2 units from 6 to 8 (33% growth).  The company also has a 2nd concept called Bo's Restobar -1 unit. Overall company growth is from 7 to 9 (29% growth).  These are family casual Thai restaurants with full bar and seating for around 150.  The per person check average is around $8-$20.  Catering and banquets are offered.  Locations are in OR and WA.

MARMALADE CAFÉ of Santa Monica, CA (founded 1990) has increased by 2 units, from 7 to 9 (29% growth).  Locations are upscale with full bar and seating for about 200.  The per person check average is around $10-$30+.  Catering and banquets are offered.  All locations are in CA.

BIG CITY BURRITO of Fort Collins, CO (founded 1994) has increased by 2 units, from 10 to 12 (20% growth) and expanded into NE.  These are fast casual Mexican restaurants serving beer and wine.  Seating is for about 50 and the per person check average is around $3-$8.  Catering is offered.  Locations are 91% franchised and are in CO, HI, NE, SD and WY.

Calabasas Hills, CA-based CHEESECAKE FACTORY (NASDAQ: CAKE; founded 1972) has opened 14 Cheesecake Factory units, from 125 to 139 (11% concept growth) and entered into CT and UT.  The company has also opened 4 units for the Grand Lux Café concept, from 9 to 13 (44% concept growth).  Overall company increase was from 134 to 152 (13% growth).  We have written about this company twice before (4/3/07-12% company growth and 7/23/07-2% company growth).  These family/casual American restaurants are open for lunch and dinner, with a $10-$30 per person check average.  Seating is for about 450, with full bar service.  Private party facilities are available at some locations.  Company trading areas are AL, AZ, CA, CO, CT, DC, FL, GA, HI, IA, ID, IL, IN, KS, KY, MA, MD, MN, MO, NC, NE, NJ, NV, NY, OH, OK, OR, PA, RI, TN, TX, UT, VA, WA, and WI.

Maitland, FL-based TIJUANA FLATS BURRITO COMPANY (founded 1995) has opened 7 units, from 52 to 59 (13% growth).  We wrote about this concept in our 8/14/07 newsletter (8% growth).  These are fast casual Mexican restaurants, open for lunch and dinner, with a $4-$10 per person check average.  Beer and wine is served.  Seating is for about 80.  Catering is available.  Trading areas are FL, IN, NC, PA, and VA.  About 50% of units are franchised.

Calgary, AB-based JUGO JUICE (founded 1998) has opened 9 units, from 74 to 83 (12% growth).  We wrote about this company twice before (10/10/06-8% growth and 8/14/07-12% growth).  The stores are quick serve smoothie cafes, with seating for about 20.  Meal periods are breakfast, lunch and dinner.  Per person check average is around $2-$6.  More than 90% of locations are franchised.  Trading areas are AB, AZ, BC, NB, NS, NV, ON, PQ, SK, and TX.

OCEANAIRE SEAFOOD ROOM of Minneapolis, MN (founded 1999) has increased by 1 unit, from 14 to 15 (7% growth) and expanded into MA.  These are upscale seafood restaurants with full bar and seating for about 300.  The per person check average is around $15-$50+.  Banquets are offered.  Locations are currently in CA, CO, DC, FL, GA, IN, MA, MD, MN, NC, PA, TN and WA.  There are plans to open locations in Phoenix, AZ and Cincinnati, OH during winter '08.  We reported on this concept in our 2/20/07 newsletter (50% growth) and our 9/11/07 newsletter (17% growth).  The company also ranked #4 on our April '07 Top Ten Fastest Growing Concepts list.

CHEEBURGER CHEEBURGER based in Fort Myers, FL (founded 1986) has increased by 2 units, from 61 to 63 (3% growth).  These are family/casual restaurants serving beer and wine.  Seating is for about 70.  Locations are currently in AL, AR, AZ, CA, CO, FL, LA, MD, MI, MO, NJ, NY, PA, SC, TN and VA.  We last reported on this concept in our 8/14/07 newsletter when they had 3% growth.

ABUELO'S MEXICAN FOOD EMBASSY headquartered in Lubbock, TX (founded 1989) has increased by 2 units, from 37 to 39 (5% growth).  Locations are family/casual with seating for about 250.  Full bar is offered and catering is available.  The check average is around $8-$20 per person.  Locations are currently in AR, AZ, FL, IN, KS, KY, MI, MO, OH, OK, SC, TN, TX, VA and WI.  We reported on this concept in our 3/13/07 newsletter when they had 6% growth.

 

Daily, Weekly or Monthly inventory for the bar?

 

For some it may be hard to believe, but many operators don't count  inventory at all, they base their alcohol costs on purchases only. Perhaps for many restaurants with a reasonable liqour mix, they simply place an overall cost on the bar and think anything more is micro-managing.

Wheat prices, why your bread is costing you a lot of dough.
