Announcing Foodie’s Corner.
 
A brand new monthly column that features the latest in essential ingredients…food trendspotting!  The hottest & much in demand products that every foodie and those who just love good food want to cook with. 
 
This month’s column takes you to France and brings you Fleur de Sel (“flower of the salt”) …it’s basically salt, but not just any salt.  Fleur de Sel is a very special all natural sea salt that is hand raked and harvested just outside the village of Guerande in Brittany, France.  The salt is harvested in July and August when the sea is calm and the weather conditions are just right.  The name Fleur De Sel comes from the aroma of violets that develops as the salt dries. Only the premium, top layer of the salt bed is used, it’s unprocessed, unrefined, unadulterated. The taste of Fleur de Sel is the complex balance of the sea and her minerals with small flaky crystals, a moist texture and slightly grey/pink cast.   This salt is unlike any you've ever tasted, more like a condiment than a spice, it highlights food flavors and is never too salty, in fact it is almost impossible to overdo it.  It’s also much healthier than your standard table salt, so put your saltshaker away and give this a whirl.

Here is a savoury recipe from our Art de Vivre in the Loire culinary vacation that incorporates Fleur de Sel:
 
Quiche Lorraine.
(A classic French egg dish.)
Serves 6
 
1 Pie Crust
250 Grams Thinly Sliced Bacon
3 Eggs
1 Cup Milk
1 Cup Sour Cream
3 Slices of Ham
Salt (very little)
Fleur de Sel
Freshly Ground Black Pepper
Chives
 
Heat the oven to 400° F (200° C).  Place the piecrust pastry into the pie pan.  Drop small pieces of bacon into a saucepan of boiling water, blanch for 1 minute and drain.  Cut the ham into small cubes.  Crack the eggs into a bowl and beat until well blended.  Add the sour cream, milk, salt, pepper, ham and bacon.
 
Bake approximately 20 minutes until the Quiche is lightly browned on top.  Sprinkle with chives and Fleur de Sel and serve hot.  Bon Appetite.

My Take on Fleur de Sel.
I first tried this delicious salt when we stayed at the beautiful Art de Vivre country home in the Loire (photo to the right), it was so delicious that we just had to bring some back home. Now it sits in the kitchen ready to use in cooking 24/7, I’ll never use table salt again!  Try it, you’re sure to be converted.
