Howdy Ya'al - DeeDee here. Spring has sprung which means it's
time to clean off those BBQs & get grilling! I love to pair my burgers & dogs with something slightly unexpected - like this
fresh, lemony dish.
Here's a dee-lish salad that makes a wonderful alternative to plain
salad or cole salw. It's also a dee-lightful main course when paired with a loaf of crusty bread, a few slices of Manchego, a glass
of homemade Sangria & an evening in the yard! Mmmm-mmmm!
Lemony Crab Salad with Baby Greens
Prep: 10 minutes; Total: 10 minutes
Servings: Makes 4
servings.
Ingredients:
1 pound fresh crab meat, picked over
3 tablespoons fresh
lemon juice
3 tablespoons extra-virgin olive oil
1 1/2 tablespoons minced fresh Italian parsley
1 5-ounce package mixed baby greens (about 8
cups)
1/4 cup extra-virgin olive oil
Preparation:
In a large nonmetallic bowl, toss first 4 ingredients to
combine. Season to taste with salt and pepper.
Toss greens with 1/4 cup olive oil in a large bowl; season to taste with salt. Divide
among 4 plates. Mound crab on greens and serve.
