Corner - 'The
Truffle, whats the fuss'?
Well, its here truffle season and the
appeal of truffles is undeniable, they are known as the "diamonds of the
culinary world". These mysterious
mushrooms are as elusive as they are captivating and this rare delicacy has a
rich aroma and flavor that can't be matched by anything else. Since the times of the Greeks and Romans
these fungi have been used in Europe
as delicacies, aphrodisiacs, and medicines. They are among the most expensive
of the world's natural foods.
French
Truffles.
France
is home to the worlds greatest truffles, the famed Perigord black truffle (or
Winter Black Truffle) is from the southwest of France. This is considered
by many to be the worlds greatest delicacy, they are exquisite, and of very
high quality.
Italian
Truffles.
One of the best known of all truffles, the aromatic
Winter White truffle or Alba Truffle is found in many different parts of Italy
(not just the
region of Alba). There is really no one Italian truffle, as Italy produces many
different varieties of truffles, including black and white, winter and
summer.
Every winter or summer day
during Truffle season, there are hounds and humans who rummage through the
fogged forests looking for buried treasure, the fresh truffle. The season
for most truffles falls between September
and May.

Quick and Simple Truffle Recipes from Provence.
Scrambled
Eggs with Truffles - Breakfast for Royalty!
Eggs
30 to 40 Grams of fresh black truffles
4 Tablespoons of cream
20 Grams of butter
The day before your royal breakfast, crack the eggs
into a large bowl. Slice the truffles finely and add them to the eggs with a
pinch of salt. Leave the mixture until you are ready to cook it. Add cream to the eggs and butter to your
pan. Cook slowly et Voila!
Fresh
Pasta with Truffles
Simply grate the truffles over cooked pasta. Add
some grated cheese (Parmesan, Emmental), butter, salt (never pepper). Enjoy!

Butter
Grate truffle into softened butter. Taste to
determine your preferences and let mixture cure at room temperature for 1-2
hours to absorb the truffle aroma. Serve
with crackers, French bread, fresh steamed vegetables or baked potatoes.
**Experiment
with the amounts, creativity is encouraged.
Use more or less of an ingredient depending on your taste buds and
savour the end result

Chef's Tip.
Shave, Sliver, and Slice - You always want to maximize
the truffle flavour, using the least amount of the ingredient as possible. So
always slice into paper-thin wedges or strips, and let them work their magic.
Use a truffle shaver (similar to a cheese grater) when shaving truffles.

Beaujolais Nouveau 2005.
At
ONE
MINUTE PAST MIDNIGHT on November 16th,
from little villages and
towns, over a million cases of Beaujolais Nouveau began their journey
through
a
sleeping France to Paris for immediate shipment to all parts of the
world.
Banners proclaim the good news: Le Beaujolais Nouveau est arrivé! "The
New
Beaujolais has arrived!" One of the most frivolous and animated rituals
in
the wine world has begun. By the time it
is over, over 65 million bottles, nearly half of the region's total
annual
production, will be distributed and drunk around the world. It has
become a
worldwide race to be the first to serve to this new wine of the
harvest. In
doing so, it has been carried by motorcycle, balloon, truck,
helicopter, jet,
elephant, runners and rickshaws to get it to its final
destination. Look for it at your local wine merchant in the
upcoming days!
