Best Crop
Ever!
Farmer John thinks this may be the best crop in the 8
years since he’s been growing berries! The picking is quick and the flavor is full, usually takes 5-10 minutes to pick a 5lb bucket, even
quicker if you pick them off the cart in the marketJ All our pick-your-own fields are
organic, the only organic strawberries in the state that you can pick yourself! It's going to be a beautiful weekend, so come on out and pick a
few.
Here's what we're harvesting
NOW!
Although the potatoes, peas, carrots and cauliflower
took a hit with the cold nights a couple of weeks ago, they are recovering nicely. Right now we’re harvesting green onions,
radishes, mixed greens, onions and broccoli out of the garden and lettuce from the greenhouse. We’ve got 14 varieties of tomatoes that we
should begin harvesting around June 15th, plus string beans, corn,over 20 varieties of peppers and cantaloupe. Don’t forget we’ll be
picking our organic garden daily for our market and what we don't grow we're finding as locally as possible!
Mother’s Day
For the first time in years, the Back Forty will be
open this spring for two holiday celebrations! Families can come out and enjoy the Back Forty on Saturday, May 12th, Mother’s Day
weekend and Saturday, May 26th, Memorial Day weekend. Activities include all our playgrounds, the underground slide, farm animals, puppet
shows, duck races and lots of rolling land to enjoy! Cost will be $10 a person for these events and includes a FREE hayride as well. Reservations are
not necessary for these two Saturdays, hours for the Back Forty will be 11-5. Strawberries are not included in this admission. www.vollmerfarm.com/backforty.html.

of spring gifts in the market. We have a wonderful new line of candles that are 100% natural and burn beautifully, plenty of jams, chocolate sauce and

Tours
Spring tours have started and are going great. We still
have some space available if you don’t want to miss the fun. Cami, Chandler and Charlie, our puppet superstars perform daily for the enjoyment

Recipe-Strawberries with ricotta cream
This recipe was
shared with us from a wonderful family friend and promises to be great!
Ingredients
- 2 cups strawberries, freshly sliced
- 1 cup blueberries
- 1/4 cup Sprite Diet Sprite, or other diet
lemon-lime soft drink, divided
- 1 Tbsp mint leaves, fresh, chopped
- 1/2 cup fat-free ricotta cheese
- 2 1/2 tsp lemon zest
- 2 Tbsp fat-free sour cream
Instructions
- Toss strawberries,
blueberries, 2 tablespoons of soda and mint together in a medium bowl; set aside for 10 minutes.
- Meanwhile, combine ricotta, remaining 2
tablespoons of soda and lemon zest in another bowl. Whip with a hand-held mixer until light and fluffy; stir in sour cream. Place about 3/4 cup of
berry mixture in each of 4 small bowls and top each serving with 1/3 cup of cream.
