Argan Oil –
The Healthy Oil.
What exactly is Argan Oil you might ask…
It’s an exquisite cooking and flavouring oil
made from the fruit of the Argan Tree harvested in the wilds of Southern Morocco and is gaining
kudos from chefs and foodies.
The 100% natural, virgin Argan oil is
extracted from the oleaginous almond of the Argan Tree. This tree is unknown
anywhere else on the planet, yet for thousands of years, the Berber women of the
Atlas Mountains have produced this oil for their
personal use. Cherished for centuries,
it has now captured the attention of the modern world.
Chefs around the world are singing the
praises of this new addition to the culinary palette. "Argan oil is unique.
It has a very powerful fragrance, almost indescribable, with a slightly nutty
flavor," says Phillipe Schmit, executive chef of New
York's Orsay, the first US A recent issue of The New York
Times boasts, "this import (argan oil) might even eclipse white truffle
oil in the drizzle department". restaurant to feature Argan

Argan Oil combines intensity and smoothness in a
velvety and rich texture. This oil will bring a new dimension to your cuisine,
as well as a tremendous addition to your salads, vegetables, fish, poultry,
lamb and game. The production of the oil, which is still mostly done by
traditional methods, is a lengthy process. Each nut has to be cracked open to
remove the kernels, and it is said that producing one litre of oil takes 20 hours'
work.
Natural Argan oil possesses a more subtle nut aroma and toasted argan
oil possesses a rich nutty flavour with fruity overtones. This exotic oil is
destined to seduce even the most celebrated chefs. It is slightly darker than
olive oil, with a reddish tinge. It can be used for cooking and is claimed to
have various medicinal properties, such as lowering cholesterol levels,
stimulating circulation and strengthening the body’s natural defenses.

Recipe
of the Month.
Here
is a recipe from our very own Exotic Morocco culinary
vacation that incorporates
the delicious Argan Oil. Here's a TIP, a one-week Exotic Morocco culinary vacation for 2 is the Live

Tomato and Onion Salad - Shlada
Mantecha
Serves
4-6
2
lbs firm ripe tomatoes, deseeded and diced into small cubes
2
oz flat-leaf parsley, finely chopped
2
medium red onions, very finely chopped
1
tsp ground cumin
1
tsp finely ground fresh black pepper
Juice
of 2 lemons (or to taste)
5
tsp argan oil
Sea
salt
Place
the diced tomatoes, chopped parsley and onions in a salad bowl. Add the spices,
lemon juice, oil and sea salt to taste and toss well together. Taste and adjust
the seasoning if necessary. Serve at room temperature.

Many airlines have now implemented new
policies regarding cabin baggage. Travellers should now check in all liquids,
cosmetics, toiletries, drinks, gels, creams, lotions, bottles of water,
shampoo, etc. To help progress through airports, all travellers are
encouraged not to include items capable of containing liquids (e.g. bottles,
cans etc.) in their hand baggage. Check with the airline for complete details.
