Pumpkins - Halloween fun and so much more!
There are a great variety of unique and colorful pumpkins that you can use to decorate your home during the
harvest
season.
Shades of blue, green, yellow, orange and even white are available to add charm to a front porch, mantle, buffet
table,
etc.
Varieties such as Little Boo, Big Moon, and Tricky Jack are fun to use for a traditional jack-o-lantern, while
Golden Hubbard, Muscade de Provence and Potimarron add a unique and almost grotesque flair with their warty growths.
Sugar Pie Pumpkins are the best variety for baking or cooking. Fresh pumpkin is great in pies, breads, pancakes,
soups, pastas, etc.

Roasted Sweet Potatoes with Cinnamon Pecan
Crunch
1/4 cup brown sugar
2 tbsp. fresh squeezed orange juice
1 tsp. vanilla extract
1/2 tsp. cinnamon
1/2 tsp. cardamom
1/2 tsp. salt
3 lbs. sweet potatoes, peeled and cut into 1 in. cubes
2 tbsp. butter
Topping:
1/4 cup brown sugar
2 tbsp. butter
1 tsp. cinnamon
1/4 cup flour
1 1/2 cup pecan halves
Dash of cayenne pepper
Preheat oven to 400 degrees.
Mix the brown sugar, orange juice, vanilla, cinnamon, cardamom and salt in a large
bowl. Toss
in sweet potatoes, coat well.
Spoon into 13 x 9 inch baking dish and dot with butter. Cover with foil and bake 30
minutes.
Meanwhile, mix flour, sugar and cinnamon. Cut in butter with a fork until coarse crumbs
form. Stir in pecans.
Remove sweet potatoes from oven and stir gently. Sprinkle with pecan topping.
Bake uncovered for an additional 25 to 30 minutes or until sweet potatoes are tender and
topping is lightly browned.
