NEED IDEAS FOR SUMMER TOMATOES?
It's easy to get overwhelmed by the abundance of tomatoes come August, but do not fear, we have some
delicious and easy solutions for you...
Chilled Gazpacho - anything goes! Tomatoes, tomato juice, cucumbers, peppers, red
onion, fresh herbs (cilantro or basil), plenty of salt, pepper, vinegar and olive oil...serve with Greek Yogurt and homemade croûtons.
Tomato Chutney - chop some onion, boil in vinegar, sugar, cloves, cinnamon, allspice and
salt...add chopped tomatoes, cook until beautifully thick and add some brown sugar to taste. Serve with chicken, pork, salmon, tofu... or
spread over these items and bake.
Roasted Tomato Soup - serve chilled. Roast tomatoes in a 450 degree oven with a
drizzle of vinegar, olive oil, chopped onion, garlic, a carrot or 2, salt and pepper. Find some crusty/stale bread from your pantry and cut
into chunks. Puree the roasted tomatoes and bread in the Cuisinart, add a few fresh herbs and voila! Thin with chicken stock if desired.
Chill the soup and serve with a dollop of sour cream.
Summer's Pasta - Toss tomatoes in balsamic vinegar, basil, olive oil, lots of garlic and
diced red
onion. Allow to sit for a while (about 4 hours)...then cook your favorite pasta, drain and toss with tomato mixture. Finish the dish with
the best Parmesan you can find!
Canned Stewed Tomatoes - If you are feeling energetic, 'can' some stewed tomatoes with
green peppers, onions, salt and a dash of sugar.
Delicious Fresh Sliced Tomatoes - Just slice them and sprinkle
with salt and pepper. Set a cruet of vinegar and extra virgin olive oil on the table for your guests to use as they wish - dig in and
enjoy!
